No fuss, no messing - it takes time to cook but little to no preparation - so no sweat!
Ingredients - serves 6
1.5kg gammon joint
2 carrots
1 large onion
tsp peppercorns
2 bay leaves plus parsley stalks
150g fine beans
150g asparagus sprue
100g young spinach, washed
150g purple sprouting broccoli
500g new potatoes - boil in salted water towards end of gammon cooking time
Method
1 Place the gammon in a pot of water, bring to the boil then drain. Return the pot to the stove with fresh water to cover the joint and add herbs, onion,, carrots and peppercorns, simmer for 2 hours. Remove the stock vegetables, peppercorns and herbs with a slotted spoon and discard. Spoon away any surface fat too, and discard, leaving an appetising broth.
2 Trim the green vegetables and wash. Add the broccoli and fine beans to the gammon pot and simmer for a couple of minutes before adding the asparagus, two minutes later add the spinach - it will wilt immediately and all is now ready. Lift everything from the pot with a slotted spoon, shred the gammon with large forks and serve over green vegetables with a ladle of gammon broth and new potatoes.
