Any sausage would do, but a powerful flavoured Riverford pork, basil & tomato would be my choice.
Ingredients - serves 4
8 pork, basil & tomato sausages
2 corn cobs
2 large tomatoes, deseeded & chopped
1 can black beans, drained & rinsed
1 small red onion, peeled & finely chopped
1 red chilli, deseeded & finely sliced
juice of 1 lime
1 tsp ground cumin
3 tbsp chopped coriander
salt, pepper
Method
1 Blanch the corn in boiling water for 3-4 minutes, allow to cool and shuck the corn kernels into a bowl. Add chopped tomatoes, black beans, chilli, cumin, lime juice and chopped onion. Season with salt and pepper to taste and then turn in the chopped coriander.
2 Grill the sausages and serve with bean and corn salsa and tortilla chips. |
