Unfortunately you really do need a waffle maker, but they’re worth having, especially if you have children as they love them. Serve with whipped cream, maple syrup, honey or stewed apples. My kids used to eat them as I made them but a plate in a warm oven can be piled high with them before serving.

Ingredients - makes about 10

250g Dove's Farm plain flour
2 tsp baking powder
2 tsp mixed spice
½ tsp freshly grated nutmeg
1 tbsp caster sugar
½ tsp salt
2 eggs
100g melted Riverford Dairy butter
500ml buttermilk (or skimmed milk if you can’t get it)

a selection of honey, maple syrup, cream, ice cream, jam...

Method

1 Sieve the dry ingredients into a large bowl, make a well in the centre and crack the eggs in. Gradually whisk in the buttermilk and melted butter, drawing in the flour, until you have a creamy batter. Leave to stand for half an hour.

2 Heat the waffle maker and ladle in a small amount of batter (it grows enormously when you close the lid and if your too generous you will find it oozing out of all sides). Cook for 2-3 minutes until golden brown and risen (you just have to keep taking a peek). Serve warm.
