An excellent, moist meatloaf - perfect for serving with crisp salad leaves and crusty bread.
Ingredients - serves 8
1.5kg minced beef
350g minced gammon
100g butter
1 onion, finely chopped
2 Cloves of garlic, 1 whole, 1 crushed
1/2 teaspoon mace
1 tsp chopped rosemary
1 tsp chopped thyme leaves
1 glass of cooking brandy
salt, pepper
& enough rashers of streaky bacon to line a loaf tin
Method
Pre heat the oven to 170°C
Rub the inside of a loaf tin with the garlic clove, then line with the rashers of bacon. In a large bowl mix all the other ingredients together really well.Spoon in the mixture, pressing down and smoothing the top, then cover tightly with foil. Stand the loaf tin in a deep tray and surround with boiling water to 1/3 up the side of the tin and bake in a low oven for 3-4 hours until the loaf is totally cooked through and tender. Allow to stand for 10 minutes before cutting into thick slices to serve. |
