burgers and red salsa

Fresh flavours and a juicy burger, simply delicious.

Ingredients - serves 4

4 beef burgers, fried or grilled

4 ripe tomatoes
2 red ramiro peppers
1 small red onion
1 clove garlic, crushed
1 tsp ground cumin
1 small red chilli (optional)
lime juice to taste
1-2 tbsp olive oil
salt & pepper

Method

Halve the tomatoes, scoop away the seeds and chop into dice and place in a bowl. Finely chop both red onion and crushed garlic and add to the tomato, together with the ramiro peppers once you’ve trimmed and seeded them and cut into small dice.

Squeeze over a little lime juice - careful because it can be overwhelming - taste and add olive oil. Chilli is optional but I think lends a lovely low level of heat and fresh flavour, seed it and very finely chop before adding with ground cumin, salt and pepper to taste. Cover and refrigerate for a couple of hours to allow the flavours to mellow and develop before finally adding a good handful of freshly chopped coriander leaves. Serve immediately with burger and bun.
