minced beef and macaroni in tomato sauce

Macaroni cheese for meat cravers...

Ingredients - serves 4

500g macaroni, cooked until tender with a dash of olive oil to stop sticking
500g minced beef
1 onion, finely chopped
4 cloves garlic, crushed & finely chopped
olive oil
1 tsp baharat spice mix
400g can chopped tomatoes
2 tbsp tomato purée
2 tbsp mushroom ketchup
salt, pepper to taste
2 eggs, beaten
2 good handfuls strong cheddar cheese, grated

Method

Sauté the onion and garlic in olive oil until soft but not coloured, add the mince and baharat spice mix, stir frying until well browned. Reduce heat, stir in tomatoes, tomato purée, mushroom ketchup and 250ml water, cover and cook over a gentle heat for 15 minutes. Taste, and adjust seasoning if necessary.

Place half the cooked macaroni in a greased dish, add the meat sauce and cover with the rest of the pasta. Pour over the beaten egg, sprinkle with the cheese and bake in a medium oven for 35 minutes until golden brown - a meal in itself or serve with garlic bread and a mixed salad.
