grilled beef burgers with tricolore salad and basil oil

Tricolore as in the three colours of the Italian flag, red, green and white - tomato, avocado and basil, and mozazrella cheese. It’s so summery, and so easy.

Ingredients - serves 4

4 beef burgers
olive ciabatta rolls
olive oil

2 avocados
1 carton of baby mozzarella
2 beef tomatoes
salt, pepper

6 tbsp olive oil
10g basil leaves
salt, pepper

Method

Peel, stone and slice the avocados thinly. Slice the beef tomatoes thinly. Arrange tomato and avocado slices in alternating layers to one side of each of four plates and then divide and scatter the baby mozzarella cheeses between the salads. Season with salt and pepper.

Cut open the olive rolls, brush with olive oil and grill to golden on the oiled side only. Grill the burgers. And finally, using a mini processor, blend the olive oil and basil leaves together with a touch of salt and pepper to make a smooth, green basil oil. Spoon a little over each of the salads and sit the open ciabatta roll beside each with the burger straddling it.
