These lovely herb & Parmesan crusted pork steaks, or chops, are good with crushed small potatoes & some tender purple sprouting broccoli.
Ingredients - serves 4
4 pork steaks or chops
50g freshly grated parmesan
2 tbsp finely chopped parsley
sprig sage finely chopped
2 cloves garlic, crushed & finely chopped
100g fresh white breadcumbs
2 tbsp olive oil & some for brushing
salt, pepper
Method
Pre heat the oven to 180°C
Spread the crumbs on a tray and bake until crisp, dry, but not colouring. Allow to cool and then mix in a bowl together with the olive oil, Parmesan cheese, chopped herbs and garlic. Season lightly and set aside.
Brush the pork chops or steaks with olive oil, season lightly, and sit on the foil under a hot grill for 5-6 minutes, depending on thickness. Once browning, turn and pack some of the herby crumb over each chop/steak and return to the grill for a further 5-6 minutes or until the juices of the meat are running clear when a skewer is inserted into the centre. The crust should be golden brown and crisp - do not burn. Serve. |
