Ingredients
500g fresh strawberries - frozen overnight
250g mascarpone cheese
75ml milk
2 sprigs of fresh mint
50g icing sugar
mint tips
fresh strawberries
Method
Sounds bizarre to freeze the strawberries I know but because they’re being processed from frozen they make and instant ice cream that is in no need of a fancy churning device. Indeed you could use any frozen fruits to hand to knock this little pudding together.
Scald the milk and pour over the fresh mint, leaving to infuse for as long as it takes for the milk to return to cold, then chill. Strain and discard the mint.
Place the frozen berries, milk, mascarpone cheese and sugar in a food processor or blender and blitz to a thick ice cream. Serve immediately in tall glasses with more berries and mint tips.
