sticky apple pudding

Sweet, spicy and satisfying - perfect for autumn

Ingredients - serves 6-8

8 large cox’s apples
75g butter
125g golden caster sugar
75ml double cream
freshly grated nutmeg

100g digestive biscuits, crushed
50g ground almonds
50g butter, melted
25g toasted almond slivers

Method

1 Preheat the oven to 190°C
Crush the digestive biscuits to crumbs, mix with the ground almond and melted butter and then press firmly into the bottom of an oven proof dish. Bake for 12-15 minutes until crisp and browned then remove to a warm place.

2 Peel and core the apples and cut into thick wedges. Melt butter, sugar and cream together in a large sauté pan stirring until bubbling then slide in the apple pieces and grate nutmeg over all. Cook for a few minutes before turning and continue for about 15 minutes in total until the apple is tender and golden/sticky. Spoon over the biscuit base and scatter with toasted almonds. Serve while still warm.
