An MGW (my mother) classic. Delicious chilled, warm or hot. And like all my mother's recipes it doesn’t take much work. Faffing around in the kitchen, when she had five children + assorted extras to feed, was hardly her scene.

Ingredients - serves 4

500g fresh, early season courgettes, sliced
A large tub of plain yoghurt
50g unsalted Yeo butter
1 ltr chicken or vegetable stock
large bunch of fresh mint, destalked

Method

Sauté the sliced courgette in butter and then whizz up with chicken or vegetable stock, yoghurt and fresh mint. Garnish with a few mint leaves.
