red onion marmalade

Bangers and mash will never be the same again. Nor will steak sandwiches.

Ingredients - serves many

1kg red onions, peeled, halved & sliced
50g unsalted butter
5 tbsp red wine vinegar
100g light brown sugar

Method

Gently fry the onion slices in the butter. Red are best but normal onions will do. When they are quite soft switch up the heat to dry them off and add red wine vinegar and sugar. Continue to cook, stirring frequently until it starts to go a little sticky. Done!

Variations are endless. You can add mustard and Cumberland sauce instead of some of the sugar, or whatever spices take your fancy added to he onions at the beginning.
