basic bean stew

Did you know that if you eat a pulse such as a broad bean or lentil with a grain such as rice or cereal you have a complete protein? Pulses are not only good for you, they are a really inexpensive and nutritious dinner. The Riverford shops have a wonderful selection of pulses. I chose the Black Turtle beans for my stew this week. Cautionary note: always soak and cook dried pulses according to instructions - undercooked pulses contain toxins.

Ingredients - serves 4

250g organic turtle beans
2 tbsp organic ginger miso paste
500ml water
1 red onion chopped
2cm cube ginger, peeled and finely chopped
2 cloves garlic, sliced
1 beetroot, peeled and diced
100g brown rice - cooked
2 tomatoes, seeded and chopped
1/2 red pepper, finely chopped
3 tbsp fresh coriander, chopped

 

Method

Soak the beans in cold water for 4 hours (always consult the pack, instructions may differ).

Place the miso paste and water in a medium sized pan and bring to the boil. Add the onion, ginger, garlic and beetroot and bring back to the boil, add the beans, boil for 10 minutes then lower the heat and simmer for 40 minutes. Mix the rice, tomatoes, red pepper, red onion and coriander together, spoon bean stew into deep soup bowls and top with the rice.
