purple sprouting broccoli with garlic and lemon dressing

One of the first signs of Spring - purple sprouting broccoli. Make the most of it - this goes beautifully with fish, chicken, pretty much anything actually…

Ingredients - serves 4

450g purple sprouting broccoli
2 cloves garlic
grated zest and juice of 1 lemon
a pinch of dried chilli flakes
3 tbsp light olive oil
salt, pepper

 

Method

Trim any woodiness from the broccoli stems, wash and steam or boil to barely tender, drain completely.

Slice the garlic wafer thin. Warm the oil on a wok or frying pan then add the garlic, lemon zest and chilli flakes, allowing them to infuse in warm oil for at least 30 seconds without the garlic being able to brown (as it becomes bitter) then throw in the purple sprouting broccoli spears - finally add the lemon juice and a touch of seasoning. Toss the broccoli spears in the oil to dress it and serve immediately.
